Red Beans and Rice

Ingredients
  • 3 cloves garlic
  • 3 stalks celery
  • 1 bell pepper
  • 1 white onion
  • 2 lbs dry red kidney beans or regular red beans
  • 2 lbs andouille sausage
  • 12 oz salt pork
  • Spices
  • 1 TB Paprika
  • 1 TB Salt
  • 1 ts granulated onion
  • 1 ts granulated garlic
  • 1 ts white pepper
  • 1 ts black pepper
  • ½ ts dried thyme
  • Cooked rice
  • Cooked corn bread
  • Chopped parsley
Instructions
  1. Mince garlic and chop onion, bell pepper and celery.
  2. Rinse beans, put into pot and cover with about 12 cups water.
  3. Slice salt pork, andouille into chunks and add to pot.
  4. Mix spices together and add to pot. Add garlic, onion, celery and bell pepper to pot also.
  5. Bring to boil, cover and lower heat to medium for about 3 hours. Check 2 hours in to see if you need to add more water. Ladle over hot rice and top with chopped parsley.
